Before being pulverized into just the right-size specks, the crickets are heat-treated, then dried. The resulting flour is then made into a paste before being mixed 50-50 with the soy product.
This makes a faux meat that is richer in amino acids, vitamins, iron and other minerals than alternatives made with soy protein alone, Sagara said.
